Gingerbread is one of my all-time favorite foods. I probably only bake it twice a year, although I crave it more often than that. Yes, I crave gingerbread. When I start wanting some, I'll think about it constantly until I get around to baking some.
Yesterday, Hubby went out to run errands and I dug all the ingredients out and baked a small pan of gingerbread. I did the dishes after I was finished and I'll tell you, I was exhausted! Isn't that just pitiful? The gingerbread turned out just right and we ate it with applesauce. By the time we eat those nine tiny pieces, I'll be over my craving for another six months.
I thought about baking it in mufin cups. I wonder how that would work. Sounds good, doesn't it? And I've found that using muffin cups helps control portion size. Another good thing about gingerbread is that it doesn't need frosting. And once it cools, it holds together nicely. It's a good thing to pack in a kid's lunch.
Okay, I'm all done babbling now. I think I'll go have a piece of gingerbread.
